SOIL CHARACTERISTICS
partially clay core, heavy, partially deep with a strong amount of silt.

TRAINING SYSTEM
Double inverted – density 3.300 strains/Ha

HARVEST
by hand - 1st week of September.

VINIFICATION
de-stemming, pressing at a low temperature of 6-7 °C and cold maceration for 18 hours, soft pressing, temperature controlled fermentation at 16 °C for 10 days.

MATURATION
in steel tanks for 4/5 months then bottled.

COLOR
deep straw yellow.

AROMA
light, fine with a note of golden apple and a touch of exotic fruit.

TASTE
dry, inviting, fresh with a hint of apple.

GASTRONOMIC MATCHES
from the beginning to the end meal, but best with appetizers, soups, broth or fish dishes.
