Wine obtained from 100% Glera grapes within the UNESCO Conegliano Valdobbiadene Docg area.
Exploring the gentle hills of Conegliano, small promontories arise within it with the shape of the steep terrain and significant slopes: they are called RIVE.
Those of BORGO ANTICO are called "RIVE di OGLIANO".
Our zero residue Extra Brut sparkling wine is very refined; on the nose the fruity and floral notes typical of Prosecco are clear, it has a very fine and elegant perlage, with an inimitable taste.
It can be combined as an aperitif, in appetizers and first courses. To be served at a temperature of 8/10 C°.

Winery
Vinification: exclusively manual harvest, soft pressing, cold cleaning of the musts with start of fermentation at 16 ° C with selected yeasts. After fermentation, 2/3 racking is carried out to eliminate the coarser lees and then a stop is made in cement with noble lees with the batonage technique. This process serves to increase the structure of the wine and limit the use of sulphites.
Secondary fermentation: following the Martinotti-Charmat method. Filtered and bottled with a pressure of 5 atmospheres.
Aging: in autoclave for 6 months, then 1-2 months in bottle

Organoleptic characteristics
The product presents itself to the eye with a pale straw yellow hue, bright and lively. The bubbles are very fine and persistent, due to their long stay in an autoclave. The sense of smell, very captivating, is characterized by elegance and finesse, it is well defined and precise. It highlights fresh floral and fruity aromas but at the same time ripe and complex. On the palate it is complex and pleasant with an unexpected level of softness and a nice persistence. It has a beautiful crémant sensation, effect of fine bubbles.

Combinations
Ideal for great connoisseurs of authenticity of the product both as an aperitif and throughout the meal.
Surprising in accompaniments with meats such as lamb or spicy white meats.
