Winery
Vinification: exclusively manual harvest, soft pressing of the whole grapes, cold cleaning of the musts with the start of fermentation at 16 ° C with selected yeasts. After fermentation, 2/3 racking is carried out to eliminate the coarser lees and then a stop is made in cement tanks with noble lees for 6/8 months. This process serves to increase the structure of the wine and limit the use of sulphites.
Aging: in bottiglia 2-3 mesi

Organoleptic characteristics
Straw yellow color full of greenish reflections. On the palate it has a dry, complex, very mineral taste due to the soil of origin.

Combinations
Excellent with fish dishes, risottos with wild herbs and white meats.
